Ingredients:
1 1/2 cup avocado
3 TBS coconut oil (melted)
1 tsp vanilla extract
2 1/2 TBS coconut cream
3 TBS raw honey
2 eggs
1/2 cup pecans
2 cups almond flour (I use honeyville almond flour or I purchase almond meal at Trader Joe's).
1 tsp baking soda
1/4 cup raw cacao
1/2 tsp salt
1/3 cup chocolate chips (you can either use Enjoy Life or Lily's Chocolates, I purchase these at Whole Foods and now I do a lot of my shopping at Thrive Market). Lily's Chocolates are stevia sweetened, nonGMO, and gluten free. Enjoy Life are dairy, nut, and soy free.
Directions:
- Preheat oven to 350 degrees.
- In a food processor, pulse the avocado, coconut oil, vanilla extract, coconut cream, honey, and eggs.
- Now transfer that mixture to a bowl.
- Chop up the pecans and add them to the mixture.
- Add the almond flour, baking soda, cacao powder, salt, and chocolate chips.
- Combine ingredients gently.
- Prepare an 8 1/2 X 4 1/2 inch loaf pan by lining it with parchment paper, and spraying it with coconut oil.
- Spoon the batter into the pan.
- Top with chocolate chips.
- Bake in the oven for 45 minutes.
